Nugat koji dobivate od Lumista proizvodi se u L\u00fcbecku u Njema\u010dkoj, a ako vam to ime zvu\u010di poznato, gotovo ste ga sigurno \u010duli u vezi s marcipanom. L\u00fcbeck ima iznimno dugu tradiciju proizvodnje visokokvalitetnog marcipana, a oznaka L\u00fcbeck Marcipan geografski je za\u0161ti\u0107ena i ima mnogo vi\u0161e standarde od obi\u010dnog marcipana. Potrebno vam je oko 1\/3 koli\u010dine \u010dokolade na koli\u010dinu nugata, ali praline je puno lak\u0161e umutiti u ve\u0107u koli\u010dinu \u010dokolade. \u010cokolada koja ostane tada se mo\u017ee koristiti kao sastojak za ganache za praline, \u0161to \u0107u predstaviti sljede\u0107i put. Za jednu pralinu potrebno vam je oko 30 g nugata, ali stvar ovisi o veli\u010dini va\u0161eg reza\u010da.<\/p>\n\n\n\n<p id=\"viewer-1kf1n\"><strong>Alat:<\/strong><br>\u2013 duboka posuda za bain marie (vodena kupelj)<br>\u2013 mali reza\u010d kola\u010di\u0107a u obliku srca (zahvaljuju\u0107i meni mo\u017eete i vi <br>  neki drugi oblik)<br>\u2013 valjak<br>\u2013 papir za pe\u010denje<br>\u2013 no\u017e za palete ili obi\u010dni no\u017e (za podmazivanje)<br>\u2013 obi\u010dna vilica ili vilica za umakanje pralina (dostupna na svim                 <br>  internetske trgovine s priborom za pe\u010denje)<\/p>\n\n\n\n<p id=\"viewer-ag1nb\"><strong>Postupak<\/strong>:<br>1. <a href=\"https:\/\/www.cokokoko.com\/post\/temperiranje-okolade-doma-s-semeni\" target=\"_blank\" rel=\"noreferrer noopener\"><u>Temperirati \u010dokoladu.<\/u><\/a> Ako ba\u0161 ne \u017eelite temperirati \u010dokoladu, mo\u017eete zaljuljati i samo otopiti neku zamjenu za \u010dokoladu, npr. slatki\u0161 se topi. Ali nikako nemojte samo otopiti \u010dokoladu (couverture=\u010dokolada) \u2013 samo ova \u0107e gotovo sigurno procvjetati (ostat \u0107e bijele to\u010dkice na njoj). Zamjene za \u010dokoladu sadr\u017ee druge vrste masno\u0107e (obi\u010dno palminu) umjesto kakao maslaca, za to ih nije potrebno temperirati, ali imaju i\u2026 lo\u0161iji okus.<\/p>\n\n\n\n<p id=\"viewer-d45e5\">2. Nugat koji je konzistencije sli\u010dan plastelinu stavite izme\u0111u dva sloja papira za pe\u010denje i razvaljajte ga na oko 7 mm, odnosno na debljinu koja vama odgovara. Ne zaboravite da se i \u010dokolada digne do vrha pa \u0107e sve skupa na kraju biti par mm deblje.<\/p>\n\n\n\n<p id=\"viewer-74n45\">3. Sada mo\u017eete izabrati jedan od dva puta (samo ne onaj koji ne postoji. Haha, popdesign, ha). Cijeli komad nugata mo\u017eete prekriti tankim (1 mm) slojem temperirane \u010dokolade, a zatim vrlo brzo izrezati srca i pojesti ostatak. Alternativno, mo\u017eete izrezati srca i svako pojedina\u010dno namazati tankim slojem temperirane \u010dokolade. Kad se temperirana \u010dokolada stegne na srcima (3 min max, ako vam kuhinja nije prevru\u0107a \/ niste dobro temperirali), \u010dokoladnom stranom ih nataknite na vilicu i umo\u010dite u \u010dokoladu. Da nisu prelivene \u010dokoladom 1. zalijepile bi se za vilicu i 2. na dnu ne bi bilo dovoljno \u010dokolade.<\/p>\n\n\n\n<p id=\"viewer-3pshu\">Umakanje pralina u \u010dokoladu istovremeno je i jednostavno i komplicirano jer na njima \u017eelimo ba\u0161 onoliko \u010dokolade koliko treba. To ide otprilike ovako: nje\u017eno stavite praline na povr\u0161inu \u010dokolade i gurnite je ispod vilicom. Zatim vilicu staviti ispod praline, izvu\u0107i je iz \u010dokolade, protresti nekoliko puta i jo\u0161 nekoliko puta umo\u010diti u \u010dokoladu, samo dnom. Ovo zadnje tapkanje \u0107e osigurati da se vi\u0161ak \u010dokolade izvu\u010de iz praline (ne mogu ba\u0161 objasniti, valjda zbog viskoznosti? \u010cokolada u posudi zalijepi se za \u010dokoladu na pralini i povu\u010de je prema dolje, ne\u0161to kao to.Fizika. \ud83d\ude42 Ostrugajte dnom vilice po rubu posude i stavite pralinu na tanjur\/komad mramora za\u0161ti\u0107en papirom za pe\u010denje\/silikonskom podlogom.
